Around the
turn of the 19th century life still revolved around constant physical
activity. Food was not readily available, nor was it abundant.
Times have certainly changed since then. Today, a short trip to the
grocery store, or to a fast food restaurant provides us with a nearly
endless variety of food choices, some of them good, and some not so good.
Modern food production technology and processing have provided us with a
bountiful array of prepared foods that take little effort to obtain, and
even less to prepare. Compared to the agrarian world of the early 1900's,
today we expend very little energy in physical activity, and food is
available in great abundance. As a result, over 60% of Americans are
